Harvesting takes place early in October, at the optimal stage of fruit ripeness, using methods that are gentle on both the tree and the olive.
The olives are immediately transported in specially certified crates that ensure proper ventilation.
The oil extraction is carried out using cold pressing, with minimal malaxation time and modern techniques, just a few hours after harvest. This process preserves the olive oil’s natural aromas and nutritional properties.
The olive oil is stored under ideal conditions, protected from light and air, in order to maintain its freshness.

Tholos EVOO is an ultra-premium olive oil with low acidity and rich in polyphenols, offering numerous health benefits.
The product carries an official health claim in accordance with European Regulation 432/2012.
